Best Oatmeal Raisin Cookies I’ve Ever Made

Can’t wait till I can eat some of this again….

2 sticks butter, softened
2 cups brown sugar, packed
2 eggs
2 teaspoons vanilla

2 1/2 cups all-purpose flour

1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
3 cups rolled oats
1 1/2 cup raisins (simmered in a little water, enough to almost cover raisins.  Use 2 Tbsp. of “juice made from the raisin water in the dough)

You may need to add a little more flour if the dough feels too “wet” but be careful because you still want these to be moist and chewy.  Bake at 375 degrees for 10 minutes. 🙂
